Soy-Glazed Eggplant Donburi with Kimchi Slaw

A blood sugar–friendly twist on soy-glazed eggplant donburi—built on silky glazed eggplant, a bright kimchi slaw, and a flexible base of cauliflower rice with easy protein options layered in.

This soy-glazed eggplant donburi is one of those.


Inspired by Namiko Chen’s original version, I’ve kept the deep savory-sweet base but rebuilt it for the way I actually cook now—lighter, more blood sugar–friendly, and flexible enough to shift depending on what’s in my fridge.


At the center is silky soy-glazed eggplant.


Next to it: a bright kimchi slaw that cuts through everything.


And underneath: cauliflower rice (or rice, if that’s your choice), acting more like a quiet foundation than the main event.


Then comes the best part—this bowl flexes. Pork belly if you want richness. Tofu if you want light. Mushrooms if you want depth. Same base, different mood.

Soy-Glazed Eggplant Donburi with Kimchi Slaw + Flexible Proteins

Servings: 2–3

Prep Time: ~15 minutes

Cook Time: ~25–30 minutes (eggplant + slaw + base)

Optional Add-On Time: +2½–3 hours (if using pork belly)

Total Time: ~40–45 minutes (or ~3 hours with pork belly)



What You’ll Need

Soy-Glazed Eggplant

  • 2 Japanese or Chinese eggplants, sliced

  • ½ tsp salt

  • 2 Tbsp arrowroot starch

  • 1–2 Tbsp neutral oil (avocado or olive oil)


Soy Glaze

  • 2 Tbsp coconut aminos or tamari (I like Bragg's)

  • 2 Tbsp mirin (I like this brand: NPG)

  • 2 Tbsp water

  • 1–2 tsp rice vinegar

  • Optional: ½–1 tsp honey or maple syrup

  • 1 tsp fresh ginger, grated

  • 2 green onions, sliced


Kimchi Slaw

  • 1 cup shredded cabbage

  • ½ cup kimchi, chopped

  • ½ small cucumber, thinly sliced

  • 1 tsp rice vinegar

  • Optional pinch of salt


Base

3–4 cups cauliflower rice (or rice, if you're not watching carbs)


Let’s Make It

  1. Prep the eggplant

    Salt sliced eggplant and let sit 5–10 minutes. Pat dry, then toss with arrowroot starch until lightly coated.

  2. Cook the eggplant

    Heat oil in a skillet over medium heat. Cook eggplant 5–7 minutes until golden and soft, turning once.

  3. Make the glaze

    In the same pan, combine soy sauce, mirin, water, rice vinegar, and optional sweetener. Simmer 1–2 minutes until lightly reduced.

  4. Glaze it

    Return eggplant to pan. Toss until glossy and coated. Add ginger and green onions at the end.

  5. Make the kimchi slaw

    Toss cabbage, kimchi, cucumber, and rice vinegar. Let sit 5–10 minutes so it softens slightly and brightens.

  6. Build the bowl

    Start with cauliflower rice. Add glazed eggplant. Layer kimchi slaw. Finish with your protein of choice.


Optional: top with toasted sesame seeds or chili crisp.



Protein Options (choose one)

Crispy Pork Belly

Season pork belly with salt + pepper.

Roast at 275°F for 2½–3 hours until tender.

Slice, then broil 3–5 minutes until crisp edges form.


Quick Chicken

Thin-slice chicken thigh.

Pan-sear in a hot skillet with salt until golden and cooked through (6–8 minutes).


Crispy Tofu

Cube tofu, press lightly, toss with arrowroot starch.

Pan-fry until golden and crisp on all sides.


Mushrooms (vegetarian depth option)

Sear sliced mushrooms in a hot pan until browned and caramelized.



Low Sodium Option

This bowl is already designed to feel balanced, but you can make it even more heart-friendly with a few simple tweaks:

  • Use low-sodium tamari or soy sauce

  • Reduce soy sauce to 1 Tbsp + 1–2 Tbsp extra water in the glaze

  • Skip added salt on the eggplant (the glaze and kimchi bring enough flavor)

  • Choose low-sodium or milder kimchi, or rinse lightly if needed

  • Lean more on flavor builders: ginger, scallions, rice vinegar, sesame oil (finish only)

  • If using pork belly, keep portion smaller and rely more on eggplant + slaw for volume


You’ll still get that deep savory-sweet glaze—just with a lighter sodium load and more brightness from the slaw.

Quick Variations

Extra heat: chili crisp or chili flakes

More richness: add sesame oil at the end
